We only need to worry about the usual community-acquired organisms: S. pneumo (covered by the vancomycin and ceftriaxone), N. meningitidis (covered by ceftriaxone), GNRs (covered by ceftriaxone), and HSV (covered by acyclovir). Based on the patient's age ≥ 50, you are correct for remembering to include Listeria coverage.
